Basic Pie Crust 1/3 cup all-purpose flour 1/2 cup Crisco vegetable shortening 1/2 teaspoon coarse salt 3 tablespoons ice water
Preparation: 1. Mix flour and salt in a bowl. Cut shortening into the flour with a pastry cutter until mixture resembles the texture of tiny peas. Do not use your hands to try and mix it, the heat from you hands will melt the shortening, causing the pastry to be too heavy. 2. Once the mixture is the right texture, add ice water and combine with a fork. 3. It may appear as if it needs more water, it does not. Quickly gather the dough into a ball and flatten into a disk shape. Wrap in plastic, and refrigerate at least 30 minutes. 4. Remove dough from refrigerator. Let dough stand until it is cool. 5. Using a floured rolling pin, roll dough on a lightly floured surface from the center out in each direction, forming a 12-inch circle. To transfer dough, carefully roll it around the rolling pin, lift and unroll dough, centering it in an ungreased 9-inch regular or deep-dish pie plate. 6. Prick dough all over with a fork. 7. Bake in oven at 400 F for 8-10 minutes until golden brown.
JELL-O Strawberry Filling 2 cups sliced strawberries ½ cup sugar 1 cup water Small strawberry JELL-O package
Preparation: Arrange sliced strawberries in cool pie shell. In a pot place sugar, water and strawberry JELL-O package and stir. Place pot on stove and bring to a boil (until strawberry mixture is pink and bubbly.) Remove from stove and place strawberry mixture in the refrigerator for half an hour - to cool and set.
Remove strawberry mixture from refrigerator and pour over piecrust with strawberry slices. Carefully place strawberry pie in the refrigerator overnight. Just before serving cover strawberry JELL-O pie with a layer of whip cream and serve. Pie keeps for twenty-four hours in the refrigerator.
